Cappadocia's fairy-chimney rock formations — volcanic tuff eroded into towers and cones over millions of years — are striking enough on their own, but it's the sunrise hot air balloon flights (often hundreds airborne at once) that made this central Anatolian region one of Turkey's most recognizable images, alongside cave hotels and entire underground cities carved into the soft rock.

The balloon flights
Weather-dependent and genuinely worth building a buffer day or two around, sunrise balloon flights (roughly an hour aloft) launch from Göreme and drift over the valleys — Göreme, Love Valley and Rose Valley among the most photographed. Flights are cancelled outright on windy mornings rather than run unsafely, so don't book a single-morning stopover assuming it will happen.
Cave hotels and Göreme Open-Air Museum
Many hotels in Göreme and Uçhisar are genuinely carved into or built into the rock formations, not just themed to look that way — a real difference in experience from a standard hotel room. The Göreme Open-Air Museum, a UNESCO World Heritage cluster of rock-cut Byzantine churches with surviving frescoes, is the region's single most concentrated historical site.
Underground cities
Derinkuyu and Kaymaklı, multi-level underground cities carved to shelter thousands of people (used historically during invasions), are a genuinely different kind of sight — narrow tunnels, ventilation shafts, and rooms extending many stories below ground. Not ideal for anyone with claustrophobia, but a real highlight for most visitors.

- —Book balloon flights for the first morning of a multi-day stay, not the last — weather cancellations mean a single-morning window can leave you with no backup day.
- —Stay at least two nights to have a realistic shot at a balloon flight actually happening, given routine weather cancellations.
- —A cave hotel is worth the modest premium over a standard room for the genuinely different experience — book one specifically, don't assume all Göreme hotels are cave rooms.
- —Derinkuyu and Kaymaklı involve stooping through narrow passages — comfortable clothing and low expectations about personal space make the visit easier.
